Nihonmatsu, Fukushima Prefecture, overlooking the Abukuma mountain range to the east and the mountains of the Adatara mountain range to the west. There is water here that is indispensable for the sake brewing of "Ninki". "Underground water of Mt. Adatara" is a clear water vein from thick granodiorite bedrock that has been polished by rocks over 40 years after the thawed water soaked into the surface of the earth. It contains various mineral components in a well-balanced manner and is the most suitable water for preparation.
Damaged by the 2011 earthquake, we will relocate to the current location, renovate the equipment, and brew throughout the year to always deliver the best products without running out of stock. Specializing in new sake that suits the modern Japanese eating habits, casual Daiginjo, sparkling SAKE, and sake to drink in a wine glass, all fermented in a wooden vat (*), tank storage is abolished, all are stored in bottles We aim for overwhelming quality by suppressing oxidation.
This land is also in good condition for growing sake rice. In the early morning, the temperature difference between day and night is so large that the fog rises, and combined with the rich soil and moderate sunshine hours, good quality sake rice is produced every year. At "Ninki", sake is brewed using local rice grown in an ideal climate. While adhering to the concept of "only ginjo is made, only handmade", we aim to create a clearer sake brewery and send it to the world.
