Daiginjo

This elegant Daiginjo is made from a very special strain of specific sake rice: Yamada Nishiki. Abelia flower yeast is used in this Daiginjo.

Slight melon aroma and a marshmallow sweetness throughout. The acidity pervades at the end, in contrast to the overall fullness of flavor.

Recommended Food Paring

Prosciutto / Melon / Washed cheese / Cream cheese

The soft sweetness like marshmallow goes well with the refreshing fruity sweetness. The soft sweetness and umami and the final acidity of this sake go well with cheese.

Amabuki brewery from Saga prefecture was established in the year 1688, Japan's Genroku period, over 333 years ago.
Amabuki is dedicated to providing the best sake made in a unique way. The uniqueness of Amabuki brewery is that it used yeast that have been extracted from natural flowers gifted from nature. Sake which is brewed with flower yeasts has rich aroma and deep flavor. There are only 20 breweries throughout all of Japan that uses flower yeast.
